Steamed Zucchini with Scallions

Ingredients

Coarse salt
3 medium zucchini (about 1 1/2 pounds), cut diagonally into 1/4-inch rounds
1 tablespoon olive oil
2 tablespoons thinly sliced scallions
Fresh ground pepper

Preparation

  1. In a large skillet with just enough water to cover the bottom (about 1/4 cup). Add 1/4 teaspoon salt; bring to a simmer. Add the zucchini. Cook, covered, until tender, 3 to 4 minutes. Drain in a colander, and transfer to a medium bowl. Drizzle the zucchini with the olive oil. Sprinkle with the scallions, and season with salt and pepper; toss to combine.
