Smashed Sweet Potatoes with Cashew Butter Sauce

  1. Step 1

    Use as many medium to large sweet potatoes as you need, allowing one whole or half sweet potato per serving. To bake, preheat the oven to 375°F. Wrap each potato in foil and place on the oven rack; bake for about 40 minutes, or until easily pierced with a knife. To microwave, allow 2 minutes per medium potato and 3 minutes per large. Test with a knife; if still too firm, cook an additional 1 minute per potato until done.

    Step 2

    Leaving the sweet potatoes in their jackets, cut each in half, smash lightly with a potato masher, and serve hot with freshly made Cashew Butter Sauce (page 216).
