Orange-Pineapple Gelatin Salad

Buttermilk heightens the flavors of the fruit in this kid- and adult-pleasing salad or dessert.

Ingredients

1 8-ounce can crushed pineapple in its own juice, undrained
1 0.3-ounce box (4-serving size) sugar-free orange or mixed-fruit gelatin
1 11-ounce can mandarin oranges in water or juice, well drained
1 cup low-fat buttermilk
4 ounces frozen fat-free whipped topping, thawed in the refrigerator (about 1 1/2 cups)
8 lettuce leaves (optional)
2 cups Bing cherries or seedless red grapes (about 12 ounces of either) (optional)

Preparation

  1. Step 1

    In a small saucepan, bring the pineapple with liquid to a boil over high heat, about 1 minute. Remove from the heat. Stir in the gelatin until completely dissolved, about 1 minute. Pour into an 8- or 9-inch square glass baking dish and put in the freezer for 5 to 8 minutes, or until beginning to set around the edges.

    Step 2

    Stir in the oranges and buttermilk. Gently fold in the whipped topping until well blended.

    Step 3

    Chill, covered, until set, about 4 hours. Cut into 8 pieces. Serve on the lettuce leaves. Garnish with the cherries.
