Ingredients

2 pounds ripe nectarines (unpeeled), quartered, pitted
3/4 cup simple syrup
1 1/4 cups white rum
1 cup plum wine
2/3 cup fresh lime juice
3 cups ice cubes
Fresh plum wedges (optional)

Preparation

  1. Step 1

    Combine nectarines and simple syrup in processor. Purée until smooth. Strain mixture into large pitcher, pressing on solids in strainer to extract as much liquid as possible. Discard solids in strainer. Add rum, plum wine, and lime juice to pitcher. Stir to blend well. (Can be prepared 6 hours ahead and refrigerated.)

  2. Step 2

    Add 3 cups ice cubes to pitcher. Pour daiquiri into cocktail glasses. Garnish rim of each glass with plum wedge, if desired, and serve.
