Ingredients

1 cup sugar
3/4 cup water
1/2 cup finely chopped peeled ginger
3/4 cup fresh lemon juice

Preparation

  1. Boil sugar, water, and ginger in a small heavy saucepan, uncovered, stirring occasionally, until mixture is reduced to about 1 cup, about 7 minutes. Remove from heat and stir in juice, then strain thourough a fine-mesh sieve into a bowl, pressing hard on and then discarding solids. Cool, then chill, covered.
