Grilled Carrots with Ginger

Ingredients

1 tablespoon vegetable oil, plus more for wok
2 pounds carrots, cut into 1 1/2-inch pieces
Coarse salt and ground pepper
4 garlic cloves, thinly sliced
1 piece (1 inch) fresh ginger, peeled and sliced
2 tablespoons soy sauce

Preparation

  1. Step 1

    Coat a grill wok with oil; preheat on grill over high heat. Toss carrots with 2 teaspoons oil; season with salt and pepper. Add to wok, cover grill, and cook until tender, shaking wok frequently, 20 minutes. If carrots brown too quickly, move wok to cooler part of grill.

    Step 2

    Toss garlic and ginger with remaining 1 teaspoon oil. Add to hot wok; cook until garlic is golden, 3 minutes. Toss with soy sauce. Transfer to serving dish.
