Raw is the most nutritious way to eat spinach—and one of the most delicious when served up in this satisfying main course salad. Look for spinach marked “salad,” which has already been cleaned. Use turkey bacon if you’re concerned about the fat in regular bacon. Hearts of palm, which are readily available canned, taste a bit like artichokes.

Ingredients

One 10-ounce package fresh salad spinach
3 strips crisp cooked bacon, crumbled
One 4-ounce can hearts of palm, drained and sliced
1/4 teaspoon garlic salt
Scant 1/2 cup Cider Vinaigrette (page 314)
2 hard-boiled eggs, sliced

Preparation

  1. In a large bowl, mix together the spinach, bacon, hearts of palm, and garlic salt. Add the Cider Vinaigrette, toss to coat, and garnish with the sliced egg.
