Ingredients

1/4 cup grated Parmesan cheese
1 tablespoon chopped fresh flat-leaf parsley
Salt to taste
1/4 lemon
1 dozen ripe cherry tomatoes, trimmed and halved
4 to 5 slices prosciutto ham, thinly sliced

Preparation

  1. In a bowl, mix together the Parmesan cheese, parsley, and salt. Squeeze 2 or 3 drops of lemon juice onto each tomato half, and top with 1/4 teaspoon of the Parmesan mixture. Fold 1-by-3-inch strips of prosciutto in half lengthwise, and wrap each up around a tomato half, securing with toothpicks.
