Bobby’s Pimento Cheese

This is my son Bobby’s own recipe for pimento cheese. It is a definite favorite.

    yields approximately 2 1/ 2 to 3 cups

Ingredients

One 3-ounce package cream cheese, softened
1 cup grated sharp Cheddar cheese
1 cup grated Monterey Jack cheese
1/2 cup mayonnaise
1/2 teaspoon House Seasoning (see page 325)
2 to 3 tablespoons mashed pimentos
1 teaspoon grated onion (optional)
Cracked black pepper to taste

Preparation

  1. With an electric mixer, beat cream cheese until fluffy. Add remaining ingredients and beat until well blended.
