Ambrosia Parfait

Here’s a modern twist to a comforting favorite. It’s perfect not only for dessert but also as a starter for a summer brunch.

Ingredients

1 11-ounce can mandarin oranges in water or light syrup, drained
1 cup cubed fresh or bottled mango
1 8-ounce can pineapple tidbits in their own juice, drained
1 medium banana, sliced
1/2 cup sliced strawberries
1 tablespoon shredded sweetened coconut
3 cups fat-free lemon yogurt
2 tablespoons dried sweetened cranberries (optional)

Preparation

  1. Step 1

    In a medium bowl, stir together the mandarin oranges, mango, pineapple, banana, strawberries, and coconut.

    Step 2

    To assemble, spoon about 1/4 cup yogurt into each parfait glass or small bowl. Top each with 1/4 cup fruit mixture. Repeat. Sprinkle with the cranberries. Serve or cover and refrigerate for up to 4 hours.
