King's Cake
The King's Cake (galette des rois), in whatever form it took, with a "bean" baked into it, has been the king of desserts on Twelfth Night, also known as the Feast of Kings or Epiphany in France, since the Middle Ages. In those days, the French King's Cake took different forms depending on the region. It was a brioche topped with candied fruits in Provence, a flat galette with cream in the North, a dry cake in Lorraine, a puff pastry round with an almond flavored filling in Lyon. À Paris, it was a gorenflot, a sort of enriched bread raised with baker's yeast, something like a Polish brioche. The ritual of this shared cake is symbolic of the day of the Epiphany, commemorating the presentation of Jesus to the Magi on the sixth of January, but it is also redolent of other pagan traditions linked to the cult of fertility that was so popular with the Romans. The "bean" hidden inside the cake was originally an actual lima bean, a symbol of renewal and fecundity, before it was replaced by a tiny porcelain figure representing the Christ child, then by a host of trinkets.
Today, the marzipan-filled, puff pastry round has gained supremacy almost everywhere. And for good reason—few pastries can give such extended pleasure. How delicious when, under its fine butter coating, the many-layered pastry (milles-feuilles), still warm, encounters the silky, fondant marzipan on the palate—a perfect combination of the puff pastry and grainy, ground almonds. No one knows exactly when this so-called "Parisian" cake was born.
The invention of marzipan dates from the sixteenth century. The history should be treated with caution, but it is sufficiently delicious to have been inscribed indelibly in the memory of gourmets. In 1588, an Italian marquis named Murio Frangipani marketed gloves perfumed with almonds. There is nothing surprising about this because perfumers were originally glove makers. The essence of Italian frangipani, about which Catherine de' Medici was passionate, inspired the pastry cooks of the French court to create frangipane cream, an equal mixture of pastry cream and almond cream.
King's Cake, whether flavored with fruits or almond cream, is a dessert with a history. Certain Epiphanies have been retained in the annals. For instance, on January 6, 1650, at the Louvre Palace, Anne of Austria and her son Louis XIV indulged in the cake, leaving on the table, as was the custom, a share for the poor, in this case the very part that contained the bean. The next morning, there was "no other king than that of the bean," the king having fled Paris to escape the uprising known as the Fronde. Is it because of this unpleasant memory that the tradition of naming the person who finds the bean as "king" for the day was outlawed during Louis XIV's reign, the custom being officially judged to be too pagan? In 1770, Diderot recounted this anecdote in his Encyclopédie, summarizing it with this amusing aphorism: "Signe Denis, sans terre ni château. Roi par the grâce du gâteau." (The sign of Denis [patron saint of Paris] without land or château, King by the grace of a gâteau.) I’ve made it lighter by coating it in the Japanese bread crumbs called panko instead of regular bread crumbs, a method you could use equally well with sweet potato slices, carrots, broccoli, cauliflower, peppers—really any vegetable you like.
Fried Ravioli
When I visited St. Louis on my first book tour, I sampled these addictive little cocktail nibbles. They are a perfect addition to an antipasto platter or a fun and easy party appetizer; serve them on a big platter with a small bowl of marinara in the center for dipping.
Goat Cheese Toasts
Goat cheese is something I like to use in many different ways, and this herb-y mixture is especially versatile. You can toss it with hot pasta for a quick, creamy sauce, or roll it into balls to top a salad, but I probably like these little toasts best of all. They’re so easy to make and they fly off the platter every time I serve them. The recipe can easily be doubled for a party.
Granola
Chock-full of grains, nuts, seeds, fruits, and natural sweeteners, granola is easy to prepare, and, when it’s homemade, it’s much lower in sugar and fat than store-bought varieties. This basic recipe can be easily adapted to create many different versions, including the three variations that follow. You can omit the nuts or the dried fruit, as desired. For a vegan option, simply omit the egg whites; the granola won’t be as crunchy but will still be delicious. Freeze granola in an airtight container for up to three months (it thaws quickly), or store at room temperature for up to two weeks.
Quinoa, Apricot, and Nut Clusters
In this version of a granola bar, clusters of quinoa, apricots, pistachios, and sunflower seeds make a sweet and delightfully chewy snack. White quinoa is used in this recipe, but you can substitute any variety; all share the same nutritional qualities, flavor, and texture.
Sliced Oranges with Candied Hazelnuts
This Mediterranean-inspired dessert is a good source of two types of fiber—soluble, from the oranges, and insoluble, thanks to the hazelnuts. Look for orange-flower water at specialty grocers.
Double Dark Chocolate and Ginger Biscotti
Dark chocolate, walnuts, and crystallized ginger combine in these incomparably good biscotti. Chocolate with at least 70 percent cocoa helps keep them rich but not too sweet.

Low in calories and saturated fat, tofu provides a healthful source of protein and makes an energizing snack. Pressing the tofu extracts some of the liquid so it will crisp in the oven.

Edamame are a rich source of fiber and phytochemicals that may help lower cholesterol, protect bones, and balance hormone levels. Serve this spicy spread with rice crackers as an anytime snack or for a party hors d’oeuvre. The dip is also delicious paired with cucumber, celery, and carrot sticks.

Store-bought snack nuts tend to contain high amounts of salt and sugar, and can sit on the shelf for months. This healthier mixture relies on spices and honey for flavor, and it tastes much fresher than the prepackaged varieties.
Chickpea Nibbles and Crunchy Split Pea Bites
Loaded with folate, iron, and B vitamins, chickpeas and split peas are also high in protein and fiber. Here they combine to make a satisfying mid-afternoon snack; you can also serve either of them as an easy hors d’oeuvre, alongside a bowl of olives.
Oven-Dried Fruit with Chocolate and Toasted Almonds
Oven-drying is a slow, gentle cooking process that uses dry heat to extract the water from fruit. Left in the oven for several hours at a low temperature, the fruit does not burn but shrinks and shrivels bit by bit as the water evaporates. As the outside of the fruit dries, the inside turns soft and chewy. Although pears, plums, and apricots are used here, any combination of stone fruit, berries, or other fruit can be dried in a similar way.
